Chicken-Spinach and Gnocchi Soup
The cold weather is definitely here and warm, hearty soups are just what we all need. This soup is very easy to make and it's so, so delicious! The flavors are absolutely wonderful together. Enjoy!
Ingredients:
-1/2 lb bacon, chopped
-1 onion, finely chopped
-3 cloves garlic, minced
-6 oz baby spinach
-5 cups chicken broth
-1/2 tsp salt
-1/2 tsp pepper
-2 cups cooked chicken, cut into chunks (rotisserie chicken works wonderful)
-1/2 cup shredded Parmesan cheese
-1 cup heavy cream
-16 oz gnocchi
Directions:
In a large pot, cook the bacon until nice and crispy. Add the onion and cook for 5 minutes. Stir in the garlic and cook for another minute or so. Add the spinach and cook for 2-3 minutes or until wilted.
Stir in the broth, salt, pepper, and chicken. Give it a good stir and cook for a couple of minutes. Add the cheese and cream. Bring to a simmer. Stir in the gnocchi and cook for 2 more minutes.
Ladle into bowls and enjoy! YUM!
