Cherry-Coconut-Chocolate Bars
I know, it's quite a mouthful to say all that, but the taste of these gems is totally worth it! The combination of flavors is fantastic. Enjoy!
Ingredients:
-1 1/2 sticks butter, at room temperature
-1 cup sugar
-1 large egg
-1 tsp vanila extract
-1/4 tsp baking powder
-1/2 cup finely chopped walnuts
-2 cups flour
-1 (18 oz) jar cherry preserves (I prefer Smucker's)
-1 cup sweetened coconut flaked, finely chopped
-2 cups semi sweet chocolate chips
Directions:
Preheat oven to 350 F.
Coat the bottom and sides of a 9x13 pan with baking spray (the one with flour and sugar). Set aside.
Cream the butter and sugar. Once nice and smooth, add the egg, vanilla, baking powder and walnuts. Mix well. Add the flour, half of cup at the time.
Take half of the dough and press it down into the prepared pan.
Top with the cherry preserves. Sprinkle with the finely chopped coconut and the chocolate chips.
Take pieces of the other half of dough and flatten with your hands as much as possible, then place on top of chocolate chips.
Once all the dough is used, place that goodness in the oven. Bake for 30-35 minutes or until the top is golden brown.
Remove from oven and cool completely. Cut into bars and enjoy!
