Four Bean Casserole
This is one of the best side dishes ever! The variety of beans is heavenly. They are cooked in a yummy sauce and are paired up with bacon and cheese. Simply perfect! Enjoy!
Ingredients:
-2 Tbs butter
-1/4 cup real bacon bits
-1/2 tsp garlic powder
-1 tsp salt
-1 Tbs yellow mustard
-1/2 cup packed brown sugar
-1/2 cup apple cider vinegar
-1/4 cup dehydrated chopped onion
-2 (15 oz each) cans baby butter beans, rinsed and drained
-1 (16 oz) can black eyed peas, rinsed and drained
-1 (15.5 oz) can red kidney beans, rinsed and drained
-1 (16 oz) can homestyle baked beans
-1 cup extra sharp cheddar cheese, shredded
Directions:
Preheat oven to 350 F. Grease 9x13 pan with butter flavored cooking spray and set aside.
In a large skillet, melt the butter. Add the bacon bits and cook for one minute. Add the garlic powder, salt, mustard, brown sugar and vinegar. Give it a good stir and bring to a simmer. Add the onion and stir.
Cover, lower the heat and let it simmer for 5-7 minutes, stirring occasionally.
While that's cooking, place all the beans in the prepared pan and mix them in. Pour the bacon sauce right on top of that. Mix so that the sauce is evenly distributed.
Cover pan with foil and bake in preheated oven for 50 minutes.
Remove foil, sprinkle the cheese on top and bake, uncovered, for 10 more minutes.
