Spicy Orzo and Vegetable Soup

This is a very quick dish to put together, super light, but very filling, and very yummy! Enjoy!
Ingredients:
-1 Tbs extra virgin olive oil
-1 small onion, finely chopped
-1 large carrot, shredded
-1/3 cup orzo
-4 cups chicken or vegetable broth
-1 cup frozen, shelled edamame
-1 (15 oz) can petite diced tomatoes with zesty jalapenos (do not drain!)
-1/2 tsp salt
-1 tsp dried parsley leaves
Directions:
Heat oil in large pot.  Add the onion and carrot.  Cook for about 5 minutes or until veggies are soft.  Add the orzo, give it a good stir and cook for 2 minutes or until pasta starts getting golden brown.  Add remaining ingredients. Give it a good stir and cook, uncovered, for about 8 minutes or until orzo is tender.  Ladle into bowls and enjoy!
