Apple-Coconut Bars
Ingredients:
-1/2 cup (1 stick) unsalted butter, melted
-1/2 cup sugar
-1 cup packed brown sugar
-1/2 tsp salt
-1/2 tsp baking soda
-1/2 tsp baking powder
-2 tsp vanilla extract
-1 tsp cinnamon
-2 large eggs
-1/2 cup quick oats
-2 apples (Gala work great) peeled, cored and finely diced
-2 cups sweetened coconut flakes, divided
-1 1/2 cups flour
Directions:
Preheat oven to 375 F. Coat 9x13 pan with baking spray (the one with butter and flour). Set aside.
Melt the butter, then pour it into your electric mixer's bowl. Add the sugar and brown sugar. Mix very well. Add the salt, baking soda, baking powder, vanilla and cinnamon. Mix well. Add the eggs, oats, apples and 1 1/2 cups of the coconut. Mix very well, then add the flour, half of cup at a time. Once well mixed, pour into prepared pan. Spread evenly in the pan. Top with remaining coconut.
Bake in preheated oven for about 30 minutes or until golden brown and toothpick comes out clean. IF the top is golden brown, but the dough is not fully cooked, cover with foil and continue baking until done.
Remove from oven and cool completely on wire rack. Cut into bars and enjoy!
