Instant Pot Whole Roasted Chicken
I know the picture doesn't do it justice, but it's pretty hard to capture a bird that's falling apart after being cooked to perfection. 😉 The process is quite quick and simple, and the results are a very tasty chicken. Enjoy!
Ingredients:
-1 whole chicken (4-5 lbs).
-2 Tbs vegetable oil, divided
-2 tsp salt
-1 tsp pepper
-1 tsp garlic powder
-1 Tbs paprika
-1 1/2 cups chicken broth
Directions:
Remove giblets from chicken. Dry chicken thoroughly on paper towels.
In a small bowl, mix together 1 Tbs of the oil along with the salt, pepper, garlic powder and paprika. Mix very well, then rub on the front of the chicken all over the skin and under the skin.
Turn your IP on saute and add the remaining Tbs of oil. Once hot, add the chicken with the breast side down. Immediately, apply remaining run on the back of the chicken. Saute quickly on both sides, for a few minutes until the skin gets a little color and crisp. Carefully, remove chicken from IP.
Place the trivet (the one that was in your IP box when you bought it) in the pot. Pour the broth on the bottom of the pot. Carefully place the chicken on top of the trivet.
Secure the lid on the pot with the valve in the sealed position. Set the pot on manual high pressure for 35 minutes.
Once done, let it do a natural release. Enjoy!
