Slow Cooker Beef Stew

 Easy and super delicious! And even better, your house will smell AMAZING while it's cooking. The flavors are fantastic together. You can serve it with some hot bread. So good! Enjoy!
Ingredients:
-1/2 lb bacon, roughly chopped
-3-4 lbs beef, cut into chunks
-salt and pepper, to taste
-1 cup red cooking wine
-2 cups chicken broth
-1/2 cup tomato sauce
-1/4 cup soy sauce
-1/3 cup flour
-3 garlic cloves, minced
-1/2 tsp dry thyme
-4-5 medium carrots, peeled and cut into chunks
-1.5 lbs baby potatoes, cleaned and halved
-8 oz mushrooms, cut into chunks
-parsley, for garnish
Directions:
Cook the skillet in a large skillet or wok. Once crisp, remove and place in the slow cooker. 
Leave the bacon grease in the pan and add the beef chunks. Season generously with salt and pepper. Quickly brown on all sides, then transfer to the slow cooker.
Return wok to the stove and add the wine, scraping the brown bits on the bottom. Bring to a simmer and reduce the heat. Stir in the broth, tomato sauce, and soy sauce. Mix well.
Scoop some of the sauce and whisk it together with the flour in a separate container. Once smooth, slowly add to the sauce in the wok, whisking as you go.
Add the sauce to the slow cooker, along with the garlic, thyme, carrots, potatoes, and mushrooms. Give it a good stir. 
Cover and cook on LOW for 9-10 hours. Ladle into bowls, garnish with some parsley (if desired), and enjoy! YUM!
