Kneaders' Aloha Summer Pasta Salad

I love this pasta salad. The ingredients taste so delicious and refreshing. Although it's called a summer salad, I love it any time of the year. I slightly twisted it from the original recipe, but the taste is the same. You can enjoy it as a main or side dish. So yummy! Enjoy!
Ingredients:
-1 lb small pasta (rotini, shells, etc)
-1 shallot, roughly chopped
-1 (20 oz) can pineapple tidbits, drained OR 1.5 cups fresh pineapple cut into tidbits size
-1 mango, peeled and diced
-2 avocados, diced
For dressing:
-1/2 cup vegetable oil
-1/2 cup sugar
-3 Tbs red wine vinegar
-1/2 Tbs ground mustard
-1 tsp poppy seeds
-pinch of salt and pepper
Directions:
Cook the pasta according to the package directions. Drain and rinse with some cold water a couple of times. Drain well.
While the pasta is cooking, whisk together all of the dressing ingredients in a large serving bowl. Once nice and smooth, add the shallot, pineapple, mango, and avocados. Give it a good, gentle stir, making sure to coat everything evenly.
When the pasta is ready and cooled, add it to the mixture, gently folding it in. 
Refrigerate for at least 30 minutes. Serve and enjoy!
