Roasted Lemon Chicken and Potatoes

This is so easy to make and quite delicious. If you like the tanginess of lemons, then this is the dish for you. The potatoes are the perfect side to the chicken. So yummy. Enjoy!
Ingredients:
-about 4 lbs chicken pieces, skin on, bone in
-2 lbs baby potatoes, halved
For marinade:
-2 large garlic cloves, minced
-1 tsp lemon zest, grated
-1/3 cup freshly squeezed lemon juice
-1/2 cup extra virgin olive oil
-2 tsp dried oregano
-2 tsp salt
-1 tsp pepper
Directions:
Preheat oven to 400 F.
Coat a large baking sheet with olive oil flavored cooking spray.
In a large bowl, mix all of the dressing ingredients. Once well combined, add the chicken pieces and coat well on every side, then place on the prepared sheet.
Add the potatoes in remaining marinade and coat well on all sides. Place next to the chicken.  If there's any marinade left, pour over chicken and potatoes.
Roast in preheated oven for 45 minutes or until chicken is cooked through.
