Pork and Kimchi Soup

This is such a deliciously comforting soup, perfect on a cold day. The flavors are fantastic together. Enjoy!
Ingredients:
-3 Tbs vegetable oil
-1 onion, finely diced
-2 tsp salt, divided
-1.5 lbs ground pork
-8 oz baby bella mushrooms, roughly chopped
-1 tsp pepper
-3 garlic cloves, minced
-1/4 tsp cayenne 
-1 Tbs Sriracha
-16 oz shredded cabbage
-1.5 cups kimchi (with the juices),  chopped
-6 cups chicken broth
-1 Tbs fish sauce
-a drizzle of sesame oil
-green onions, chopped, for garnish
Directions:
Heat oil in large pot. Add the onion and season with 1 tsp of the salt. Give it a good stir and cook for about 5 minutes.
Add the pork, mushrooms, remaining salt, and pepper. Stir and cook for 5 more minutes, breaking the pork as it cooks. Stir in the garlic, cayenne, and Sriracha. Cook for an extra minute.
Stir in the cabbage and kimchi (with the juices). Cook for another minute. Add the broth and fish sauce. Give it a good stir and bring to a simmer. Cover and simmer for 10 minutes.
Drizzle a little sesame oil on top.
Ladle into bowls and top with some chopped green onions, if desired. YUM! Enjoy!
