Buttery-Garlicky Elk Heart

One of my neighbors has been very generous and gave me the elk heart he hunted. The heart was super fresh and I was super excited to cook it. It's super simple, but the flavors are absolutely amazing together. And the heart is very tender and melts in your mouth. So, so good! I served it with French fries and they were perfect together. Enjoy!
Ingredients:
-4 Tbs (1/2 stick) salted butter
-1 small onion, finely chopped
-2 garlic cloves, minced
-1 elk heart (around 2 lbs), cut into bite size chunks
-salt and pepper, to taste (about 1/2-1 tsp each)
Directions:
Melt the butter in large skillet. Add the onion and garlic. Give it a good stir, then add the elk heart chunks. Season with salt and pepper. Stir, cover, and cook for 15 minutes. 
Stir, cover again, and cook for another 15 minutes.
Serve immediately on top of fries. YUM! Enjoy!
