Buffalo Chicken Chili
Oh, the flavors in this chili! Super delicious, with the perfect little kick. So, so yummy! Enjoy!
Ingredients:-1 Tbs extra virgin olive oil
-1 onion, finely chopped
-1 Poblano pepper, seeded and finely chopped
-4 garlic cloves, minced
-1 tsp smoked paprika
-1 tsp cumin
-1 tsp garlic powder
-1 tsp onion powder
-1 Tbs dried parsley leaves
-1 Tbs dried chives
-3 cups chicken broth
-1 (10 oz) can petite diced tomatoes with green chilies
-2 chicken breasts, skinless, boneless, cut into bite size chunks
-1 (15 oz) can white/cannellini beans, drained (do not rinse)
-3/4 cup buffalo wing sauce (your favorite)
-4 oz cream cheese, at room temperature
-blue cheese crumbs, for topping
Directions:
Heat oil in large pot. Add the onion and Poblano pepper. Give it a good stir and cook for about 5 minutes.
Stir in the garlic and cook for 30 seconds.
Sprinkle with the paprika, cumin, garlic powder, onion powder, parsley, and chives. Mix well and add the broth. Give it a good stir. Add the tomatoes and chicken chunks.
Bring to a simmer and cook, covered, for 15 minutes.
Uncover and add the beans, buffalo sauce, and cream cheese. Give it another good stir and cook for about 10 minutes or until nice and creamy.
Ladle into bowls, top with some blue cheese crumbs and enjoy! YUM!
