Irina's Lemon Bars

My amazing sister made these and we absolutely love them! It is her mother in law's recipe. These lemon bars are moist and simply delicious. Enjoy!

Ingredients:

For crust:

-2 cups flour

-1 cup (2 sticks) unsalted butter, at room temperature

-1/2 cup powdered sugar

-1 pinch of salt

For filling:

-4 large eggs

-2 cups sugar

-1/4 cup flour

-6 Tbs freshly squeezed lemon juice

For garnish:

-powdered sugar

Directions:

Preheat oven to 350 F. Grease a 9x13 pan and set aside.

Mix the crust ingredients until crumbly. Place in the prepared pan and pack it down.

Bake in preheated oven for 15 minutes.

While the crust is baking, beat the eggs for the filling. Add remaining ingredients and mix until well combined.

Pour filling over hot crust. Bake for another 25 minutes.

Remove from the oven, cool and sprinkle with powdered sugar on top. 

**To make these in a cookie sheet, just make 1 1/2 of the recipe**
