Mediterranean-style Shrimp and Grits
This is the ultimate comfort food! It's got everything I love: the grits, shrimp, roasted peppers, feta cheese, garlic, and so forth. So, so delicious! Enjoy!
Ingredients:
-2 Tbs butter
-3 garlic cloves, minced
-2 shallots, finely chopped
-1/4 tsp dry thyme
-1 cup quick grits
-3.5 cups chicken broth
-3 Tbs heavy cream
-2 shakes hot pepper sauce
-1 tsp salt
-1/2 tsp pepper
-1 (16 oz) jar roasted red peppers, chopped
-2 lbs large shrimp, peeled, deveined, with tails removed
-1.5 cup good feta cheese, crumbled
Directions:
Preheat the oven to 400 F. Coat the bottom and sides of 9x13 baking dish with butter flavored cooking spray. Set aside.
In a large skillet or wok, melt the butter. Add the garlic, shallots, and thyme. Give it a good stir and cook for a couple of minutes. Stir in the grits and cook for another minute.
Add the broth and cream. Mix well and bring to a simmer. Simmer, uncovered and stirring occasionally, until the liquid is mostly absorbed, about 8-10 minutes. Stir in the hot sauce, salt, and pepper. Mix well, then add the roasted peppers.
Pour that goodness into the prepared pan. Top with the shrimp (make sure to have them all in a single layer), then sprinkle with the cheese.
Bake in preheated oven for 20 minutes or until the shrimp is nice and pink and the cheese begins to brown.
