Smothered Steak and Veggies

 This is so delicious! The steak melts in your mouth and the veggies are such a wonderful addition. We like ours on top of rice, but you can enjoy it by itself as well. Enjoy!

Ingredients:
-1/4 cup flour
-1/2 tsp salt
-1/2 tsp pepper
-2 lbs steak, cut into chunks
-2 small onions, halved and sliced
-2 green bell peppers, seeded and sliced
-1 garlic clove, minced
-2/3 cup beef/vegetable broth (either works fine)
-1 (12 oz) package frozen corn kernels
-2-3 ripe tomatoes, chopped
-salt and pepper
Directions:
Preheat the oven to 325 F. Coat a 9x13 baking dish with cooking spray and set aside.
Coat a large skillet with cooking spray and heat it up.
Mix the flour with the salt and pepper in a resealable plastic bag. Add the stake chunks and coat evenly.
Add to hot skillet and quickly brown on all sides.
Place browned stake into prepared pan. Top with the onions, bell peppers and garlic. Pour the broth on top. Layer the corn and tomatoes on top. Season with salt and pepper (1/2-1 tsp each).
Cover and bake in preheated oven for 1.5 hours.
