Creamy Asparagus-Leek-Walnut Soup
This is such a delight! The flavors in this soup are absolutely outstanding! Delicious! Enjoy!
-5 Tbs butter
-1 bunch asparagus, woody ends removed and asparagus spears torn into small pieces
-1 leek, well cleaned and finely chopped
-1/4 cup rice
-1 cup chopped walnuts
-1 cup cooking wine
-6 cups vegetable broth
-1/4 tsp salt
-1/4 tsp pepper
Directions:
Melt the butter into large saucepan. Add the asparagus and leek. Stir and cook for about 5 minutes.
Add the rice, walnuts and wine. Give it a good stir and cook for about 5 minutes. Stir in the broth and bring to a boil.
Reduce the heat, cover, and simmer for 40 minutes.
Uncover and remove from heat. Using an immersion blender, puree until smooth. Season with the salt and pepper.
Ladle into bowls and top with more chopped walnuts, if desired. Enjoy!
