Smothered Chicken with Corn and Bacon
This is super delicious and the chicken is very tender. The corn and bacon are a wonderful addition and they give the dish a great flavor. The chicken is cooked until is fall off the bone tender. Super yummy! Enjoy!
Ingredients:
-2 Tbs extra virgin olive oil
-4 chicken thighs, skin-on, bone-in
-salt and pepper
-12 oz bacon, chopped
-1 small onion, finely chopped
-2 cloves garlic, minced
-1 cup orzo pasta
-3 cups milk (at least 2%)
-1/2 tsp dry thyme
-1 cup frozen corn kernels, thawed
Directions:
Heat the oil in a large saucepan. Season the chicken on both sides with salt and pepper and add to the hot oil. Sear on both sides until golden brown. Remove chicken from pan. Discard the fat left in the pan.
Return pan to the stove and add the chopped bacon. Cook until golden brown. Add the onion, garlic, and orzo. Give it a good stir and cook until pasta id golden (about 5 minutes).
Stir in the milk, thyme, 1/2 tsp salt, and 1/2 tsp pepper. Give it a good stir and return the chicken to the pan (nestle it between the orzo mixture). Bring that goodness to a simmer. Lower, the heat, cover, and cook for 20 minutes, stirring occasionally. Stir in the corn, cover again and continue simmering for another 10 minutes, stirring occasionally. Serve and enjoy!
