Instant Pot Sweet Pork

 This is so, so delicious!! And super easy since the Instant Pot shaves off so much time! The key to this insanely delicious pork is using root beer. A lot of people make sweet pork with coke or pepsi, but every time I did that, it came out kind of bland. I made this using root beer, honey, and brown sugar. It is DELISH!! People compare it to Cafe Rio sweet pork, but since I've never had it, I'm not sure how accurate that is. Anyway, enough talking. Here's the recipe and suggestions for serving it. Enjoy!
Ingredients:
-4 lbs pork roast, cut in half
-2 cups root beer, divided
-1 (15 oz) can tomato sauce
-1.5 cups packed brown sugar
-2 Tbs honey
-2 cloves garlic, minced
-2 tsp ground cumin
-a pinch of salt
-a sprinkle of pepper
Directions:
Coat the bottom of your IP with cooking spray. Season pork with salt and pepper on both side, then lay on the bottom of IP. Pour one cup of root beer on top. 
Secure the lid on top with the valve in the sealed position. Cook on manual HIGH pressure for 60 minutes. Do a natural release (it will take a while and that's ok).
Once that's done, remove pork from IP and pour our any liquid.
Return inner pot to IP and set on saute mode. Add the remaining root beer, tomato sauce, sugar, honey, garlic, cumins, salt, and pepper. Give it a good stir and bring to a boil. Let it simmer for 5 minutes.
While the sauce is simmering, shred the pork using two forks.
Turn off the IP and add the shredded pork. Give it a really good stir for even coating. 
Serve and enjoy!
Here's a serving suggestion. I also found this delicious creamy cilantro-lime dressing. It's a family favorite.
Lay a warm tortilla on a plate. Top with some cheese, cooked rice, black beans, pork, lettuce, tortilla strips, and grated parmesan cheese. Drizzle with some creamy cilantro-lime dressing. Add a little pico de gallo and guacamole on top. YUM! Enjoy!
