Cream of Spinach Soup

I love spinach and I have it as often as I can. But it has to be fresh, never frozen. I don't like that one. Anyway, here's another way to enjoy it: as a creamy soup. And it's so delicious! And packed with so much good stuff! YUM! Enjoy!
Ingredients:
-2 Tbs butter
-2 small shallots or 1 small red onion, finely chopped
-4 cups chicken or vegetable broth
-1.5 lbs red potatoes, peeled and diced
-10 oz fresh spinach
-16 oz half and half
-1 tsp salt
-1 tsp pepper
Optional toppings:
-sour cream
-chopped chives
-croutons (I like the butter and garlic croutons)
Directions:
Melt the butter in large saucepan. Add the shallots and cook for about 3 minutes. Add the broth and potatoes. Give it a good stir and bring to a boil. Lower the heat and simmer, uncovered, for 20 minutes.
Add the spinach and cook for about 3 minutes or until all spinach is wilted.
Using an immersion blender (or working in batches with a regular blender), process the soup until nice and smooth.
Return to the stove and add the half and half, salt and pepper. Give it one last good stir.
Ladle into bowls, top with favorite toppings, if desired, and enjoy! Yum!
