Pulled Pork Casserole (Mămăliguță cu Porc)

This is real comfort food for me.  There's nothing yummier than fresh cornmeal mush (polenta) with some yummy pulled pork and onion softened in butter, then everything topped with cheese and baked until nice and melted.  Drooling yet? It's super easy and so, so delicious!  Enjoy!
Ingredients:
-4 cups water, divided
-1 Tbs salt, divided
-1 cup cornmeal
-1 tsp garlic chili sauce
-1 (15 oz) can cream style sweet corn
-4 Tbs salted butter
-1 large onion, halved, then sliced
-2 lbs pulled pork (homemade or store bought, either one is fine)
-2 cups shredded cheddar and Monterey Jack cheese
Directions:
Preheat oven to 350 F.  Coat a 9x13 pan with butter flavored cooking spray and set aside.
In a medium pot, bring 3 cups of the water to a boil.  Season with 2 tsp of the salt.
In a small bowl, mix the remaining water, salt and cornmeal.  Add to boiling water and carefully stir until bubbly. Cover, lower the heat, and let it simmer for 5 minutes, stirring occasionally.
Remove pot from stove and stir in the garlic chili sauce and corn.  Give it a good stir and pour mixture on bottom of prepared pan.
While the cornmeal mush is cooking, melt the butter in large skillet.  Add the onion and cook for 5-7 minutes or until softened and golden brown.  Add the pulled pork and cook until heated up. 
Spread pork and onion mixture right on top of cornmeal mush.  Top with cheese and bake in preheated oven for 5 minutes or until cheese is melted.
Remove from oven and let it sit for 5 minutes. Scoop onto plates and enjoy!  YUM!
