-8 oz pasta (any kind you like)
-2 Tbs extra virgin olive oil
-12 oz medium shrimp, peeled, deveined, with tails removed
-1 tsp salt
-4 oz sun dried tomatoes with herbs, drained and julienned
-5 garlic cloves, minced
-1 cup heavy cream
-2 tsp dried basil
-1 tsp crushed red pepper flakes
-1 tsp paprika
-1/2 tsp salt
-1 cup shredded mozzarella
Cook pasta according to package directions.  Drain.
While the pasta is cooking, heat oil in large skillet or wok.  Add the shrimp, season with salt and cook until nice and pink.  Remove shrimp onto plate.
Return skillet and any liquid left to stove.  Add the tomatoes and garlic.  Cook for 1 minute.  Pour in the heavy cream.  Add the basil, pepper flakes, paprika and salt.  Give it a good stir and bring to a boil.
Add the cheese and stir until melted. Add the drained pasta and cooked shrimp.  Give it one last good stir, serve and enjoy!
