Cashew Chicken

I love cashew chicken with all those yummy flavors blended together. This one has a nice kick to it as well and lots of fresh veggies.  So yummy!  Enjoy!
Ingredients:
-2 Tbs sesame oil
-1 Tbs extra virgin olive oil
-2 lbs chicken thighs, skinless, boneless, cut into chunks
-2 tsp salt
-2 tsp pepper
-1 large head broccoli, cut into florets
-1 yellow/orange/red bell pepper, chopped
-2 garlic cloves, minced
-1 cup shelled frozen edamame
-1 cup honey roasted cashews
-5 green onions, chopped
For the sauce:
-3 Tbs soy sauce
-2 Tbs honey
-1 Tbs rice vinegar
-1 Tbs chili garlic sauce
-1/2 tsp ground ginger
Directions:
Heat both oils in a wok.  When hot, add the chicken chunks and season with the salt and pepper. Cook until nice and golden brown.
Add the broccoli, bell pepper, garlic and edamame. Mix well and cook for about 4 minutes.
While that's cooking, whisk all sauce ingredients and set aside.
To the wok add the cashews and sauce.  Give it a cook stir and cook for 2 minutes.  Finally, add the green onions. Mix well and remove from stove.
Serve over rice.  Enjoy!
