Ingredients:
-24 oz medium shrimp, cooked, with tails removed
-2 avocados, diced
-2 Tbs red onion, chopped
For dressing:
-1/4 cup extra virgin olive oil
-1/4 cup red wine vinegar
-1/2 tsp garlic powder
-2 tsp dried parsley leaves, or 1 tsp fresh parsley, finely chopped
-1 tsp Dijon mustard
-salt and pepper, to taste
Directions:
Place shrimp, avocado and onion in large bowl.
In a separate bowl, combine all dressing ingredients. Mix very well. Pour over shrimp. Toss to coat evenly. Serve and enjoy!
