Romanian Tomato-Cucumber Salad (Salată de Roșii cu Castraveți)

This is an amazingly easy and delicious recipe.  I grew up with this salad and I love making it for my family almost every week.  It is best in the summer when the veggies are fresh. You can enjoy this salad as a side dish or by itself with some delicious hot rolls or hot bread to dip in the juice from the fresh veggies.  Pure delight!  Enjoy!
Ingredients:
-3-4 large tomatoes
-1 cucumber
-4-5 Tbs extra virgin olive oil
-2 tsp apple cider vinegar
-1/2 tsp salt
-1/2 tsp pepper
-crumbled feta, optional
-kalamata olives, pitted, optional
Directions:
Cut tomatoes in bite size pieces.  Peel cucumber and slice.  Mix.  Add oil, vinegar, salt and pepper(you can add more, according to your liking).  Mix very well.
If desired, top with crumbled feta and olives.  Enjoy!
