Instant Pot Brown Rice and Bean Soup
This is so full of flavor and so easy to make! There's no soaking of the beans, which is super nice. The brown rice give it a nice, nutty texture. So delicious! Enjoy!
-1 Tbs extra virgin olive oil
-1 onion, finely chopped
-4 garlic cloves, minced
-1 jalapeno, seeded and chopped
-1 Tbs ground cumin
-1 Tbs smoked paprika
-1 bay leaf
-3/4 cup brown rice
-3/4 cup dry pinto beans, rinsed and drained (do not soak)
-3/4 cup dry black beans, rinsed and drained (do not soak)
-8 cups vegetable broth
-salt and pepper, to taste (about 1 tsp each)
-juice from 2 limes
-green onions, chopped
Directions:
Set your IP on saute. When hot, add the oil. Stir in the onion. Cook for a couple of minutes. Add the garlic, jalapeno, cumin and paprika. Give it a good stir and cook for 1 minute.
Click on cancel and add the bay leaf, rice, beans, and broth. Give it a good stir.
Secure the lid on top with the valve in the sealed position. Set to manual HIGH for 30 minutes. Do a natural release.
Remove the bay leaf. Stir in the salt and pepper and lime juice. Give it one last good stir. Ladle into bowls and top with green onions. YUM! Enjoy!
