Tortellini with Spinach and Tomatoes
This is quick, easy, and very yummy. Everything is nice and fresh. The flavors are wonderful together. Enjoy!
Ingredients:
-2 Tbs extra virgin olive oil
-2 lbs ripe tomatoes, roughly chopped
-1 tsp salt
-1 tsp pepper
-1/4 tsp crushed red pepper flakes
-3 cloves garlic, minced
-1 (19 oz) bag frozen 3-cheese tortellini
-6 oz baby spinach, roughly chopped
-shaved Parmesan, for garnish
Directions:
Heat oil in large skillet (wok). Add the tomatoes, salt, pepper, and flakes. Give it a good stir and cook for about 5 minutes. Stir in the garlic and cook for one more minute.
Add the frozen tortellini. Give it a good stir and cook for about 4 minutes. Add the spinach and cook for another minute or until nice and wilted.
Remove from stove.
Scoop that goodness onto bowls and top with shaved Parmesan. Yum! Enjoy!
