Turkey (Chicken) Pot Pie
This is super easy to put together and very delicious! I had some leftover turkey that I used to make this yumminess, but leftover rotisserie chicken will do just fine. The flavor combo is very nice and creamy. This is what I would call soul food. YUM! Enjoy!
Ingredients:
-1/3 cup butter
-1/2 cup flour
-2 cups chicken broth
-1 cup milk (no lower than 2%)
-1 tsp salt
-1 tsp pepper
-1 (12 oz) bag frozen mixed veggies (peas, carrots, corn, green beans)
-2 cups cooked turkey (chicken), chopped
-2 pie crusts
Directions:
Preheat oven to 375 F.
Roll one pie crust on bottom of deep pie dish. Place pie plate on cookie sheet. Set aside.
In a large skillet, melt the butter. Add the flour and make a quick roux. Once smooth, add the broth and milk. Whisk until smooth. Season with the salt and pepper. Add the frozen veggies and turkey (chicken). Give it a good stir and cook until everything is heated.
Remove from the stove and cool to room temperature.
Once cooled pour filling into prepared pan. Top with remaining pie crust. Fold the edges and crimp. Poke slits on top in any pattern you like, so that the filling can vent during baking.
Bake in preheated oven for 40-45 minutes or until the crust is golden brown.
Remove from oven and let it sit for 10-15 minutes. Slice and enjoy!
