Roasted Creole Kielbasa, Shrimp and Veggies
This is quick, super yummy and quite hearty! The perfect meal! Enjoy!
Ingredients:
-olive oil cooking spray
-1 lb Polska kielbasa, cut into chunks
-12 oz medium shrimp, peeled, deveined, with tails removed
-1 lb asparagus, trimmed and broken into 2 inch pieces
-1 lb brussels sprouts, trimmed, with stems removed and cut in half
-1 red bell pepper, cut into chunks
-1 orange bell pepper, cut into chunks
-1 yellow bell pepper, cut into chunks
-3 Tbs extra virgin olive oil
-2 Tbs creole sesoning
Directions:
Preheat oven to 400 F.
Coat a cookie sheet with the olive oil cooking spray. Add the kielbasa, shrimp and veggies. Drizzle the oil and sprinkle with the seasoning. Give it a good stir and spread goodness mixture evenly, so that everything is in one layer.
Roast in preheated oven for about 20 minutes.
Scoop onto bowls and enjoy!
