Pear Upside-Down Cake
Ingredients:
-butter flavored cooking spray
-3/4 cup packed brown sugar
-2 pears, peeled, cored and thinly sliced
-3/4 cup unsalted butter, softened
-2 cups powdered sugar
-1 tsp baking powder
-3 large eggs
-1 tsp vanilla extract
-1/2 cup cornmeal
-1 cup flour
Directions:
Preheat oven to 350 F. Coat the bottom and side of a deep pie pan with butter flavored cooking spray. Sprinkle the brown sugar all over the pan. Top with the pear slices as evenly as possible. Set aside.
In your electric mixer, combine the butter and powdered sugar. Mix until crumbly. Add the baking powder and eggs, one at a time. Stir in the vanilla, cornmeal and flour. Once well mixed, spoon carefully over the pears.
Bake in preheated oven for 50-55 minutes or until toothpick comes out clean.
Remove from oven and place pan on wire rack to cool for 5 minutes. Invert on serving plate. Slice and enjoy!
