Caprese Panini with Almond Pesto

The key to this super delicious sandwich is the almond pesto. I had something similar while having lunch with my friends. It was love at first bite and I knew that I had to recreate it. So simple and so delicious! YUM! Enjoy!
Ingredients:
For Almond Pesto:
-1/2 cup lightly roasted almonds
-2 garlic cloves, peeled and cut into small chunks
-1 cup baby spinach leaves
-1.5 cups fresh basil leaves
-2 Tbs shredded Parmesan cheese
-1/4 cup extra virgin olive oil
-1/2 tsp salt
For Sandwich:
-good bread (we prefer honey wheat)
-good tomatoes (the Heirloom variety is perfect), cut into slices
-whole milk mozzarella, cut into thick slices
Directions:
Place the almonds, garlic, spinach, basil, and Parmesan in your food processor. Process for 10-15 seconds. While it's still running, pour the olive oil through the top and sprinkle with the salt.
To assemble the sandwich, spread some of the pesto on both slices of the bread. Add the tomatoes and thick slices of cheese. Place on your panini press and let it do its magic. Slice into halves and enjoy! Sooo good!
