Sugar Pie
Anyone watching the show "This is us" most likely wants to have a piece of Rebecca Pearson's sugar pie, right? But they never reveal the full recipe nor the secret ingredient. So, based on the screenshot of the recipe card (that I'm sure everyone took), I filled in the missing parts and came up with this. I used a frozen pie crust, but you can easily make your own homemade one. Whatever crust you use, let me tell you, What a treat this pie is! It's creamy and super delicious. It's become an instant family favorite. Can't wait to make it again and again. So, so good! Enjoy!
Ingredients:-9 inch frozen deep dish pie crust, thawed and baked on foil lined baking sheet according to package directions
-1 cup sugar
-1/4 cup cornstarch
-2 1/2 cups heavy cream
-1/2 cup (1 stick) butter, cubed
-1/2 Tbs vanilla extract
-cinnamon
Directions:
Preheat oven to 375 F.
In a large saucepan, whisk the sugar and cornstarch. Stir in the cream and whisk until smooth. Bring to a boil. Reduce the heat and cook for a couple of minutes, stirring continuously until thickened and bubbly.
Remove pan from stove. Stir in the butter cubes and vanilla extract. Mix until smooth, then pour into prepared crust.
Sprinkle some cinnamon on top.
Bake in preheated oven for 20 minutes.
Cool completely on wire rack, then refrigerate until ready to enjoy. YUM!
