Spicy Oven Baked Grits with Shrimp

I seriously love shrimp and grits. It's one of my all time favorite comfort foods. It's also super easy to make, it's hearty, and there are quite a few variations to choose from and try. This is yet another one and it's very tasty, with a nice little kick. Enjoy!
Ingredients:
For grits:
-4 cups chicken broth
-1 cup quick cooking grits
-1 (10 oz) can diced tomatoes with green chilies, drained
-1 cup Monterey Jack cheese, shredded
-1.5 cups cheddar cheese, shredded, divided
-1 tsp pepper
For shrimp:
-2 Tbs butter
-1 yellow or orange bell pepper, chopped
-1 onion, finely diced
-2 large garlic cloves, minced
-12 oz medium shrimp, peeled, deveined, with tails removed
Directions:
Preheat oven to 350 F. 
Make the grits first. Pour the chicken broth in a 9x13 baking dish. Add the grits and mix well. Bake, uncovered, in preheated oven for 30 minutes.
Stir in the tomatoes with chilies, the Monterey Jack cheese, and 1/2 cup of the cheddar cheese. Bake, uncovered, for 10 minutes.
Remove from the oven and sprinkle on top with remaining cheddar cheese and the pepper. Let it rest.
While the grits are resting, let's make the shrimp.
Melt butter in a large skillet. Add the bell pepper and onion. Give it a good stir and cook for 5-7 minutes. Stir in the garlic and shrimp. Cook for a couple of minutes or until the shrimp turns pink.
Serve immediately on top of the grits. YUM! Enjoy!
