Butter and Lemon Curd Bars
This is an easy and super delicious treat. Make sure to let the bars cool completely before cutting them (it will be tempting before that 😂). So buttery and lemony! Enjoy!Ingredients:
-1.5 cups (3 sticks) unsalted butter, at room temperature
-2 cups sugar
-1/2 cup brown sugar
-4 large eggs
-1/2 tsp salt
-1/2 tsp baking powder
-zest of 1 lemon
-1/2 cup lemon curd
-2 1/2 cups flour
Directions:
Preheat oven to 350 F. Coat the bottom and sides of a 9x13 pan with the baking spray (the one with flour and butter). Set aside.
Cream the butter and sugars. Add the eggs, one at a time. Stir in the salt, baking powder, and zest. Slowly add the lemon curd. Once well mixed, add the flour, half of cup at a time. The batter will be thick.
Spread thick batter onto prepared pan, making sure to even it out. Bake in preheated oven for about 40 minutes or until the toothpick comes out clean.
Remove from oven, let it cool completely, cut into bars and enjoy. Yum!
