Breakfast Casserole with Ham, Swiss Cheese, and Croissants

Just a nice, simple variation of the popular breakfast casserole. So easy and so yummy. Enjoy! 
Ingredients:
-10 oz mini croissants
-16 oz diced ham, well drained
-8 oz block Swiss cheese
-6 large eggs
-1 cup heavy cream
-1/2 cup milk (at least 2%)
-1 Tbs honey
-1 tsp yellow mustard
-1 tsp salt
-1 tsp pepper
Directions:
Coat a 9x13 baking dish with cooking spray. Break the croissant in pieces and place in prepared pan. Top with the diced ham. Shred the block of cheese right on top of the ham, making sure to spread it evenly.
In a large bowl, beat the eggs. Whisk in the cream, milk, honey, mustard, salt, and pepper.
Pour over the cheese. Cover tightly with foil and refrigerate for 8-24 hours.
Preheat oven to 325 F. 
Keep the casserole covered and bake for 45 minutes. Uncover and bake for 30 more minutes.
Remove from the oven and let it sit for 10 minutes. Slice and enjoy! YUM!
