Whole Roasted Duck

 So easy and so delicious! Enjoy!
Ingredients:
-1 whole duck, innards removed
-1 cup cooking white wine
-2 oranges, juiced
-1 orange, quartered
-1 red onion, peeled and quartered
-salt and pepper
-olive oil cooking spray
Directions:
Preheat the oven to 500 F.
Coat the rack of a roasting pan with the cooking spray. Set aside.
Score the skin of the duck with a sharp knife.
Pour the wine and orange juice in the bottom of the roasting pan.
Turn the duck upside down and coat with the cooking spray. Season generously with salt and pepper. Place on the rack in the roasting pan, breast side up. Coat that side with the cooking spray and season generously with salt and pepper, as well. Stuff the duck with the quartered onion and orange. If some pieces don't fit, just place them on the outside of the duck.
Cover the roasting pan and place in preheated oven. Roast for 45 minutes.
Turn off the oven and DO NOT OPEN the door! Leave the pan in there for another 90 minutes.
Set the oven to HIGH broil and uncover the pan. Broil for 4-5 minutes or until the skin is crisp and golden brown.
Remove from the oven and let it rest for 10 minutes. Carve the duck and enjoy! YUM!
