Mediterranean Chicken and Salami Pasta Salad

These are my childhood flavors; all in one nice, yummy dish. Everything is super tasty and they go perfectly together. I like to use the Romanian Sibiu Salami, which can be found at Eastern European grocery stores. It really is the best salami! If you can't find it, any dry salami should work. Also, for the feta, the best kind is the sheep feta, which is creamier and absolutely delicious. And get the block, not the already crumbled kind (that one is super dry and not as tasty). Enjoy!
Ingredients:
-3 cups dry elbow macaroni or any small pasta
-1 cup cubed rotisserie or grilled chicken
-1 cup diced salami
-1 cup diced English cucumber
-1 cup cherry tomatoes, halved
-1/2 cup roasted red peppers, roughly chopped
-1/2 cup castelvetrano or kalamata olives, pitted and halved
-1 large shallot, diced
-1 cup good feta cheese, crumbled
-1/2 cup extra virgin olive oil
-1/3 cup red wine vinegar
Directions:
Cook the pasta according to package instructions. Drain, rinse in cold water until completely cooled, then drain again.
Pour pasta in large salad bowl. Add remaining ingredients. Mix VERY well. Let it sit for about 30 minutes at room temperature.
Serve and enjoy! Refrigerate leftovers. YUM!
