Lexie's Lemon-Poppy Seed Muffins

 These muffins are light, moist and packed with flavor. They are such a delight! Enjoy!
Recipe yields about 12 muffins
Ingredients:
-6 Tbs unsalted butter, at room temperature
-3/4 cup sugar
-2 large eggs
-2 lemons
-1 Tbs vanilla extract
-2/3 cup sour cream
-1/4 tsp baking soda
-1/2 tsp baking powder
-1/2 tsp salt
-1 1/2 cups flour
-2 Tbs poppy seeds
Directions:
Preheat oven to 425 F.
Line a muffin pan with paper liners and set aside.
Cream the butter until nice and smooth. Add the sugar, eggs, the zest from one lemon AND the juice from both lemons, vanilla, and sour cream. Mix very well. Once smooth, add the baking soda, baking powder, salt, flour-half of cup at a time-, and poppy seeds.
When everything is well mixed, divide the batter evenly between the prepared muffin pan cups.
Bake in preheated oven for 15 minutes or until golden brown and the toothpick comes out clean.
Remove from the oven and cool in the pan on the wire rack for 10 minutes. Carefully, remove muffins from pan and cool completely on wire rack. Enjoy! YUM!
