Lexie's Banana Bread with Cinnamon Crunch Topping

 What a delight this banana bread is! The cinnamon crunch topping is the perfect addition to this. So yummy! Enjoy!
Yields one large loaf
Ingredients:
For the batter:
-2 large eggs
-1/2 cup sugar
-3 ripe bananas
-1/3 cup vegetable oil
-1/2 cup sour cream
-1 pinch of salt
-1.5 tsp baking powder
-2 tsp cinnamon
-1/4 cup cornstarch
-1 3/4 cup flour
For the topping:
-1/2 cup flour
-1/2 cup packed brown sugar
-1 tsp cinnamon
-1/4 cup (1/2 stick) unsalted butter, melted
Directions:
Preheat oven to 350 F. Coat the bottom and sides of large loaf pan with baking spray (the one with flour and sugar in it). Set aside.
Cream the eggs and sugar. Add chunks of the ripe bananas, then the oil and sour cream. Once smooth, stir in the salt, baking powder, cinnamon, cornstarch and flour. Mix very well then pour batter into prepared pan.
Mix together the topping ingredients until crumbly. Sprinkle on top of the batter.
Bake in preheated oven for about 60 minutes or until toothpick comes out clean.
Cool in pan for 10 minutes, then on wire rack. Slice and enjoy! YUM!
