Instant Pot Chicken Taco Bowls

 So easy and so delicious! We absolutely love this dish. And even better, everything, including the rice, is cooked together, so no extra dishes to clean. So good! Enjoy!

Ingredients:
-2 cups chicken broth, divided
-3 chicken breasts, boneless, skinless, cut into chunks
-1 (1 oz) packet taco seasoning
-1 (15 oz) can corn, drained
-1 (15 oz) can black beans, rinsed and drained
-1.5 cups mild or medium salsa
-1 1/4 cups uncooked rice
Toppings:
-shredded cheddar cheese
-sour cream
-chopped green onions
-avocado
Directions:
Coat the bottom of your IP with cooking spray. Add 1 cup of the broth. Add the chicken and season with the taco seasoning. Add the drained corn and black beans, salsa, and rice. Pour remaining chicken broth on top, making sure to cover the rice.
Cover and secure the lid with the valve in the sealed position. Set on manual HIGH for 8 minutes.
Once done, do a natural release.
Give it a stir, then scoop that goodness into bowls and add your favorite toppings. Enjoy!
