Roasted Potatoes, Sausage and Veggies

 This is super yummy and filling. All the flavors combine beautifully in this dish. Enjoy!

Ingredients:
-2 lbs breakfast sausage links
-1/4 cup oil
-4 large potatoes, peeled and sliced
-2 green bell peppers, seeded and cut into chunks
-2 red bell peppers, seeded and cut into chunks
-3 large onions, halved and sliced
-1/2 cup white cooking wine
-1/2 cup chicken broth
-1 tsp dried parsley flakes
-salt and pepper
Directions:
Preheat oven to 400 F.
In a large skillet, brown the sausage links. When done, put them on a large baking sheet.
Return the skillet to the stove and heat up the oil. Add the potatoes and cook until browned (for about 10 minutes). Transfer potatoes to the baking sheet with the sausage.
Return skillet to stove and add the bell peppers and onion. Cook for about 5 minutes, then add to the baking sheet.
Pour the wine and broth on top. Sprinkle with the parsley and salt and pepper. Mix everything together.
Roast in preheated oven for 25 minutes. Serve immediately. Yum! Enjoy!
