Cinnamon-Banana Bread

 What a treat this delicious bread is! The cinnamon goes perfectly with the ripe bananas. So yummy! Enjoy!

Ingredients:
-1 cup (2 sticks) unsalted butter, melted
-1 cup sugar
-2 large eggs
-1 tsp vanilla extract
-1 tsp baking soda
-4 ripe bananas
-2 cups flour
-1 firm banana, sliced
For cinnamon mixture:
-3 Tbs unsalted butter, melted
-3 Tbs sugar
-3 Tbs packed brown sugar
-2 Tbs cinnamon
Directions:
Preheat oven to 350 F. Coat the bottom and sides of large loaf pan with the baking spray (the one with the flour and butter). Set aside.
In your electric mixer bowl, cream the slightly cooled melted butter with the sugar. Stir in the eggs, vanilla, and baking soda. Add chunks of the ripe bananas in. Once well mixed, add the flour, half of cup at the time.
Quickly mix the cinnamon ingredients until well combined.
Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon mixture and swirl. Repeated with remaining batter and cinnamon. Top with the banana slices.
Bake in preheated oven for about 70 minutes or until the toothpick comes out clean.
Cool in pan for 15 minutes, then transfer to wire rack to cool completely. Slice and enjoy! YUM!
