Sweet and Spicy Roasted Shrimp

 So easy and so, so delicious! This dish is hearty, easy to make and packed with so much flavor. Enjoy!

Ingredients:
-1 Tbs Jamaican jerk seasoning, divided
-2 lbs jumbo shrimp, peeled, deveined, with tails removed
-1 (20 oz) can pineapple rings, drained and rings cut into quarters
-2 red/orange bell peppers, seeded and cut into strips
-1 jalapeno, seeded and sliced
-lime wedges
-brown rice, cooked, for serving
Directions:
Preheat oven to 425 F.
Line a cookie sheet with foil. Spray generously with olive oil flavored cooking spray (or regular cooking spray). Sprinkle with half of the seasoning. On top of the seasoning, arrange (in a single layer) the shrimp, pineapple, bell pepper, and jalapeno. Spray the shrimp/veggie mixture with more cooking spray and sprinkle remaining seasoning on top.
Roast in preheated oven for 15-20 minutes or until shrimp is cooked through.
Serve immediately on top of cooked brown rice and some lime wedges. YUM! Enjoy!
