Roasted Asian Chicken and Veggies

 Quick, easy, and absolutely delicious! Enjoy!

Ingredients:
For the sauce:
-1/2 cup soy sauce
-2 Tbs sweet chili sauce
-1/4 cup honey
-2 garlic cloves, minced
-1 tsp fresh ginger, grated
Other:
-2 large chicken breasts, skinless, boneless, cut into chunks
-1 large head broccoli, cut into florets
-2 red/orange/yellow bell peppers, seeded and roughly chopped
-salt and pepper
For topping:
-white and black sesame seeds
Directions:
In a small sauce pan, combine all sauce ingredients. Give it a good stir and bring to a boil. Reduce heat and simmer, until sauce is thick and bubbly (about 5 minutes). Remove sauce from the stove.
Preheat oven to 400 F.
Coat the bottom of a cookie sheet with cooking spray. Sprinkle with some salt and pepper. Top with the chicken chunks, broccoli, and bell peppers. Mix well. Spray the top with more cooking spray and season with some salt and pepper just a little).
Drizzle half of the sauce on top of the chicken. Give it a good stir. Bake in preheated oven for 20 minutes.
Remove from the oven and drizzle remaining sauce on top. Mix well.
Serve immediately on top of rice and top with some mixed sesame seeds. YUM! Enjoy!
