Tater-Tots Jalapeno Popper Casserole

 This is so rich and so, so tasty! Definitely don't count the calories on this one! :) The flavors are absolutely wonderful together and the casserole is filling, making the perfect side dish. Enjoy!

Ingredients:
-2 lbs frozen tater tots
-2 (8 oz) each packages cream cheese, at room temperature
-1 cup sour cream
-1 lb bacon, roughly chopped, cooked and cooled
-2 cups fiesta blend shredded cheese
-5-6 jalapeno peppers, seeded and chopped
-1 bunch green onions, cleaned and chopped
Directions:
Preheat oven to 425 F.
Place tater tots in 9x13 baking dish. Even them as much as possible. Bake in preheated oven for 15 minutes. Remove from oven, but leave the oven on.
In a large bowl, mix the cream cheese, sour cream, most of the bacon (leave a little for topping), 1.5 cups of the cheese, jalapeno peppers, and 3/4 of the onions. Mix well, then spread that goodness over the tater tots. Top with remaining bacon, cheese, and green onions.
Bake, uncovered, in the preheated oven for 15-20 minutes or until cheese is nice and melted. YUM! Enjoy!
