Banana-Coconut Bread
So easy, so delicious, and what a great way of using those ripe bananas. Enjoy!
Recipe yields one large loaf
Ingredients:
-1/2 cup (1 stick) butter, at room temperature
-3/4 cup sugar
-2 large eggs
-3-4 (depends on how big they are) very ripe bananas, peeled
-1 tsp vanilla extract
-2 tsp baking powder
-1/2 cup shredded sweetened coconut
-2 cups flour
For topping:
-1 Tbs shredded sweetened coconut
Directions:
Preheat oven to 350 F. Coat the sides and bottom of large loaf pan with baking spray (the one with butter and flour). Set aside.
Cream the butter and sugar. Add the eggs and bananas (just throw chunks of bananas in the mix). Once smooth, stir in the vanilla, baking powder, coconut, and flour, half of cup at a time.
Pour that goodness into the prepared pan. Sprinkle with the topping coconut.
Bake in preheated oven for 60-65 minutes or until the toothpick comes out clean.
Cool in the pan for 15 minutes, then remove loaf onto wire rack and cool completely. Slice and enjoy. YUM!
