Mediterranean-Style Chef Salad

 Growing up with these flavors, I try to enjoy them as often as I can and hope that my family likes them as well. This salad is super easy and so very delicious. We love the Greek ranch dressing that most grocery stores carry. It goes perfectly with this salad. Be prepared for a burst of amazing flavors in every bite. Enjoy!

Ingredients:
For the chicken:
-olive oil cooking spray
-2 chicken breasts, skinless, boneless, cut into chunks
-seasoned salt
-garlic powder
-pepper
For the salad:
-a bag of spring mix
-3-4 hard boiled eggs, shelled and roughly chopped
-cherry tomatoes, halved
-1 cucumber, peeled and chopped
-2 avocados, chopped
-1 cup marinated artichoke hearts, drained and roughly chopped
-crumbled feta cheese
-sliced roasted red bell peppers
-sliced kalamata olives
-sliced red onion
-Greek ranch dressing
Directions:
Coat a large skillet with the olive oil cooking spray and heat it up. When hot, add the chicken chunks. Season with seasoned salt, garlic powder, and pepper. Give it a good stir. Cook until nice and golden brown and the chicken is cooked through. Remove skillet from stove and let the chicken cool a bit.
Assemble your salad, by scooping up some of the spring mix into a salad bowl. Top with some chicken pieces, then remaining ingredients. Drizzle some of the Greek ranch dressing on top. Enjoy! YUM!
