Ham and Pineapple Casserole

 What a wonderful mix of flavors this is! It's also super easy to put together and quick. Enjoy!

Ingredients:
-3 cups COOKED rice
-1 (20 oz) can pineapple tidbits, do NOT drain
-8 oz cubed ham
-1 green bell pepper, seeded and chopped
-1/2 cup mayonnaise
-1 tsp yellow mustard
-1 tsp salt
-1/2 tsp pepper
-8 oz shredded Swiss cheese, divided
Directions:
Preheat oven to 350 F. Coat the sides and bottom of 8x8 baking dish with cooking spray. Set aside.
In a large bowl, mix together the rice, pineapple with the juice, ham, and bell pepper. Give it a good stir. Add the mayo, mustard, salt and pepper. Mix very well. Stir in half of the cheese.
Once well mixed, pour into prepared pan. Cover with foil and cook in preheated oven for 30 minutes.
Remove from the oven, uncover and sprinkle with remaining cheese. Bake, uncovered, for 10 more minutes. Enjoy!
