Lexie's Snickerdoodle Cookies

 I love when my cute Lexie is in baking mode. She really wanted to make these cookies for us and they came out absolutely delicious. They're packed with flavor and so moist. Delish! Enjoy!

Ingredients:
-1 cup (2 sticks) unsalted butter, at room temperature
-2 cups sugar
-2 large eggs
-1 tsp vanilla extract
-1/2 tsp baking soda
-1/2 tsp cream of tartar
-3 cups flour
For coating:
-1/4 cup sugar
-1 Tbs cinnamon
Directions:
In your electric mixer's bowl, cream the butter and sugar. Add the eggs, one at a time. Stir in the vanilla, baking soda, and cream of tartar. Stir in the flour, half of cup at the time.
Once well incorporated, shape the dough into balls.
Line a cookie sheet with parchment paper.
In a shallow bowl, mix the sugar and cinnamon. Coat each ball of dough with the cinnamon mixture. Place on prepared cookie sheet, setting the balls about 2 inches apart.
Place in the fridge for about 1 hour.
Preheat oven at 350 F.
Bake chilled cookies for 12-15 minutes, or until the edges turn golden brown.
Remove from the oven, let them cool and enjoy! YUM!
