Mediterranean Chicken

These are childhood flavors for me. Everything is so refreshing and so tasty! We enjoy this dish with either rice or fresh mamaliga (cornmeal mush). Enjoy!
Ingredients:
-2 chicken breasts, skinless, boneless, cut into chunks
-1 tsp salt
-1 tsp pepper
-1.5 cup cherry tomatoes, cut in halves
-1 (12 oz) jar marinated quartered artichoke hearts, do NOT drain
-1/2 cup kalamata olives, pitted and halved
-1 cup roasted red pepper strips, roughly chopped
-crumbled feta cheese
Directions:
Coat a large skillet with olive oil cooking spray. Heat it up. Once hot, add the chicken chunks. Season with the salt and pepper. Cook until chicken is golden brown. 
Add the tomato halves and cook for a couple of minutes. Stir in the artichokes and the marinade, olive, and peppers. Give it a good stir and cook for 2-3 minutes.
Serve hot over rice or mamaliga. Top with crumbled feta. Enjoy!
