Banana Bread with Pistachios and Dark Chocolate Chips

Oh, this is so yummy! The pistachios and dark chocolate chips are such a nice addition to this delicious bread! And it's so easy to put together. Enjoy!
Recipe yields 2 large loaves
Ingredients:
-2 sticks, unsalted butter, at room temperature
-2 cups sugar
-2 tsp baking soda
-1/2 tsp salt
-5 very ripe bananas
-3 large egs
-1 Tbs vanilla extract
-4 cups flour
-12 oz dark chocolate chips
-1 cup pistachios, shelled and roughly chopped
Directions:
Preheat oven to 350 F. Coat the bottom and sides of 2 large loaf pans with baking spray (the one with flour and butter). Set aside.
Cream the butter and sugar. Add the baking soda and salt. Mix well. Add banana chunks and eggs, one at the time. Stir in vanilla and flour, half of cup at a time. Mix very well. Add the chocolate and pistachios.
Once well mixed, divide the batter evenly between the 2 prepared pans. 
Bake in preheated oven for 55 minutes or until toothpick comes out clean.
Cool in pan on wire rack for 10-15 minutes. Carefully, remove loaves from pan and place on wire rack to cool completely. Slice and enjoy!
